Tong-Seng Ayu


Bahan :
1 kg Daging Kambing, potong2 dadu
1bh bawang bombay, iris tipis
5 bh Bawang Merah, iris tipis
3 siung Bawang Putih, iris tipis
3 bh cabe merah, potong2
3bh cabe rawit , potong2 ( kalo suka pedes)
1/2 sdt lada bubuk
2 sdm kecap manis
1 bh tomat, potong2
1 sdt gula
garam secukupnya
500ml Santan encer (Kuah gulai kambing)
daun kol
Cara :

* Tumis bawang bombay, bawang merah, dan cabe.
* Setelah agak layu, masukkan bawang putih, aduk.
* Masukkan daging kambing, aduk2 hingga berubah warna, beri garam.
* Masukkan santan encer (lebih enak pake kuah gulai kambing), aduk2 masak hingga empuk.
* Masukkan lada,tomat, daun kol, kecap, dan gula secukupnya.
* Mendidih, angkat.
* Sajikan hangat dgn irisan tomat dan irisan daun kol.

Kacang bawang (Onion-Peanut Fried)


Bahan:
1kg kacang
1/2 liter minyak goreng
1 ons bawang putih
Garam secukupnya
Kacang yang sudah dikups kulitnya direndam dalam air panas beberapa saat agar kulit ari mudah dikelupas.
Setelah kacang dibersihkan dari kulit arinya, masukkan kacang tersebut kedalam larutan garam dan bawang putih yang ditumbuk selama 1 jam.
Ambil kacang yang telah terendam tersebut dan digoreng dengan irisan bawang putih sampai berwarna kuning kecoklatan.
Maka kacang bawang telah siap disajikan.

Cauliflower Soup

2 tablespoons Parmesan cheese
1 medium cauliflower
boiling water
salt
6 tablespoons butter
4 tablespoons flour
2½ quarts stock/bouillon
1 cup cauliflower water
3 egg yolks -- beaten
1 tablespoon cold water
¼ teaspoon white pepper
Cook cauliflower covered with salted boiling water until tender,
not too soft. Drain; save cooking water. Separate into flowerettes and keep for tureen.

Stir well flour and butter together in soup kettle.
Add liquids and boil 3-5 minutes. Add egg nad water.
Pour over cauliflower in tureen. Add pepper and cheese.

Dried Meat

Brine Meat
2 T. sugar 2 lbs strips of meat sliced thin
2 T. salt pork, game, and beef will work
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. black pepper
¼ cup soy sauce
¼ cup worcestershire

Mix all of the ingredients of the brine ingredients together.
In a shallow dish lay the strips of meat then completely cover then with the brine.
Whisk until all the sugar and salt is dissolved.
Push a piece of plastic wrap onto the surface to seal it off from the air.
Marinate 12 to 24 hours. Grill with indirect heat on a cool smoke which is 100 to 200 degrees that is designed to dry the meat out. Next smoke it on a smoker, or It will take 1 – 2 hours to smoke the meat.
After smoking leave open to the air to further dry for another 24 hours.
The combination of salty brine, smoking and drying the meat makes it shelf stable.
Bacteria does not survive well in an environment that is alkaline from the salt and lacks moisture form drying and smoking.

Beet Soup

12 large beets
2 pounds short ribs
½ cup lemon juice
½ cup sugar
1 teaspoon allspice
1 onion -- sliced
Salt
½ teaspoon white pepper
Sour cream Wash the beets and scrape but do not peel them.
Cut beets into small chunks. Place in a kettle with the remaining ingredients,
except to sour cream. Cover with water, put a lid on the kettle and simmer 2½ hours over low heat.
Strain through a sieve or colander.

Serve cold with a topping of sour cream.

Beer Soup

* 1 quart beer
* 1 quart water
* 2 tablespoons sugar
* 1 tablespoon butter
* 3 egg yolks
* 1 cup cream Combine the beer and water than bring to a slow boil.
Add the sugar and butter. Cook 35 minutes over low heat.

Beat the egg yolks, add the cream and beat together until light.
Gradually add ti the beer mixture, beating to prevent curdling.
Do not allow to boil.

Beer and Bread Soup

½ pound whole wheat bread
½ pound pumpernickel bread
4½ cups water
4½ cups dark beer or ale
6 tablespoons sugar
¼ teaspoon salt
1 stick cinnamon -- 1" long
¼ lemon, peel only Soak breads in water overnight (covered).
When ready to make soup, cook covered over low heat, stirring frequently, until a thick paste.

Add remaining ingredients and boil a few minutes.

Serving Ideas: Spoonful of cream or whipped cream in each bowl.

Barley Soup

* 6 tablespoons pearled barley
* 3 pints beef stock
* 1 onion hopped
* 3 carrots diced
* 4 tablespoons celery chopped
* 6 tablespoons mushrooms chopped
* 4 tablespoons butter
* 1 teaspoon salt
* ½ teaspoon white pepper
* 4 tablespoons sour cream
Simmer barley in ½ of the stock or water for 1 hour.
Boil the vegetables and mushrooms in the other half unitl tender.
Add the cooked barley mixture, butter, salt and pepper while still over heat.
Remove from burner and blend in the sour cream.
Serve hot or cold.

Apple Soup for Six

for 6
* 2 pounds tart apples
* 1 stick cinnamon
* 1 lemon juice & rind only
* 2 pints boiling water
* 5 tablespoons dry bread crumbs
* 6 tablespoons sugar
* 2 cups dry red wine
* 4 tablespoons currant jelly Wash within water, core and slice the apples. Put apples, cinnamon stick,
lemon peel, boiling water and the crumbls in a kettle and boil until apples are tender.

Remove the cinnamon stick and lemon peel. Put apples through a sieve.
Add lemon juice, sugar, wine and jelly.

Stir well, reheat briefly, and serve at once.

Apple Soup

Serves 6

* 1½ pounds apples
* 5 whole cloves
* 2½ quarts water
* 1 teaspoon lemon juice
* 2 cups white wine
* 1 stick cinnamon
* 2 tablespoons cornstarch
* 1 teaspoon curry powder
* ½ cup whipping cream
* 3 tablespoons sugar
* 1 tablespoon butter
* 1/8 teaspoon salt
Simmer apple peels, cloves, cinnamon and water 30 minutes.
Sprinkle lemon juice over cored apple halves.
Retain broth, but discard peels and spices.
Add apple slices and wine. Simmer 30 minutes.
PureƩ apple mixture in blender, adding cornstarch and curry powder during processing.
Pour into saucepan. Stir in cream, cuger, butter and salt.
Boil over medium heat until thickened. Serve hot.

Tawes Sauce Tomato


Bahan:
Ikan Tawes segar

Bumbu-bumbu:
5 bawang putih
i potong jahe, ditumbuk

Sauce:
3 buah tomat ukuran sedang
4 bauh cabe merah
gula dan garan secukupnya

Cara memasakIkan tawes sesudah dihilangkan sisik dan kotorannya dicuci bersih, kemudian digoreng hingga matang.

Untuk membuat saus:
Tomat, cabe merah, ditumbuk hingga menjadi adonan. Tambahkan gula dan garam secukupnya. Masukkan kedalam tempat dan didihkan.

Cara Penyajian:
Letakkan ikan tawes goreng diatas piring datar, tuangkan saus diatasnya dan kecap sedikit. Sebagai bahan untuk meningkatkan selera dan keindahan tambahkan potongan buah tomat dan daun bawang sebagai penghias.

Oatmeal Molasses Bread

Oatmeal Molasses Bread Recipe
A favorite oatmeal bread with molasses and milk and rolled oats.
INGREDIENTS:
* 2 packages active dry yeast
* 1/2 cup warm water
* 1 1/2 cups milk, scalded
* 1/3 cup shortening
* 2 teaspoons salt
* 1/2 cup molasses
* 4 1/2 to 5 cups all-purpose flour
* 2 cups quick cooking rolled oats
PREPARATION:
Combine yeast and warm water in a cup or small bowl; set aside.
Pour scalded milk over shortening, salt, and molasses.
Stir until shortening melts. Cool to lukewarm then stir in 1 cup flour, yeast mixture, and oats.
Stir in enough flour to make a soft dough.

Turn dough out onto a lightly floured surface and knead until smooth and elastic, about 10 minutes.
Round dough into a ball and place in a buttered bowl; turn over to grease both sides.
Cover with a dish cloth and let rise in a warm place until nearly doubled in size, about 1 hour.
Punch down; cover and let rest 10 minutes. form into two loaves. Place in greased 9x5x3-inch loaf pans.
Brush tops with melted butter. Cover and let rise for about 1 hour, until nearly double in size.
Bake at 375° for 35 to 40 minutes. Remove from pans immediately and cool on racks.
Brush with more melted butter while hot for a softer crust.

Honey Bread


Milk and Honey Bread

This is an easy bread to make with your bread machine,
and it's a wonderful bread for sandwiches and toast.

INGREDIENTS:
* 1 cup plus 1 tablespoon milk
* 3 tablespoons honey
* 3 tablespoons melted butter
* 3 cups bread flour
* 1 1/2 teaspoons salt
* 2 teaspoons active dry yeast

PREPARATION:
Add ingredients to the bread machine pan in the order recommended by your bread machine manufaturer.
When evething is ready put into oven, wait 15 to 20 minutes.

Sour Cream Coffee Cake


Coffee cake special recipe made with sour cream and a chocolate cinnamon filling.
INGREDIENTS:
* Filling:
* 1/2 cup granulated sugar
* 1 teaspoon ground cinnamon
* 1 tablespoon unsweetened cocoa powder
* 1/2 cup finely chopped pecans or walnuts
* .
* 1 cup butter
* 1 1/3 cups granulated sugar
* 3 large eggs
* 3 cups flour
* 3 teaspoons baking powder
* 1 teaspoon baking soda
* 8 ounces sour cream
* 1/4 cup cream or milk
PREPARATION:
Combine filling ingredients; set aside.
Grease and flour a 10-inch tube cake pan. Heat oven to 350°.
In a mixing bowl with mixer at high speed, beat butter with sugar until light.
Beat in eggs, one at a time, beating after each addition.
Combine the flour, baking powder, and soda in a medium bowl.
Combine sour cream and milk or cream in a small bowl.
Slowly beat in flour mixture, alternating with the sour cream mixture.
Beat until smooth. Spoon half of the batter into the prepared pan.
Sprinkle the filling mixture over the batter.
Spoon remaining batter evenly over the filling. Carefully spread to cover.
Bake for 55 to 60 minutes, or until a wooden pick or cake tester inserted in center comes out clean.
Cool on a rack in the pan for 10 minutes. Remove the sides of the pan and cool completely on rack.
